Menu for the week of March 19th-25th

Monday
Lunch: Spaghetti Bolognese/Veggiese with Whole Wheat noodles, Veg
Dinner: Chicken Korma, Chickpea Tempeh Korma (V), Brown Rice, Cauliflower

Tuesday
Lunch: Chili Mac (Beef or Tofu-V), Vegetables
Dinner: Breakfast for dinner: Kale Potato Gratin (Beef and Veg), Migas, Muffins, Bacon, Vegetables, Etc.

Wednesday
Lunch: Chicken Fried Rice, Tofu fried rice V, Veggies
Dinner: Brisket (Beef or Tofu V), Herbed Rice, Acorn Squash, Stephen’s Additions

Thursday
Lunch: Tostada Thursday! (Chicken, TVP, Bean V, etc.), Fideo, Veggies
Dinner: Thai Red Curry with Shrimp or Tofu V, Rice, Peas & Peppers

Friday
Lunch: Pizza! Salad, Soup
Dinner: Dijon Chicken, Dijon Seitan V, Balsamic Glazed Carrots, Basil Penne

Saturday
Brunch: Garrett’s Great Grunch – Brunch!

Sunday
Dinner: Vert’s at Taos: Gyro, Falafel, Fresh Pita, Fresh Hummus V, Toppings, etc. with Couscous and Cucumber Tomato Salad
