April 18th-24th

Monday:

  • Lunch: Gyros, Falafel, Pita Bread, Hummus/Tsatziki Sauce.
  • Dinner: Orange Chicken, Orange Tofu, White Rice, Snow Peas, Eggrolls, and Asian Slaw Salad.
Tuesday
  • Lunch: Barbacoa Tacos, Sweet Potato, Black Bean and Corn Tacos, White Rice, and Guacamole.
  • Dinner: Garlic and Basil Chicken, Garlic and Basil Tofu Cutlets, Potato Gratin, Asparagus, Strawberry, Feta, and Pecan Salad.
Wednesday
  • Lunch: Pizza, and Mixed Salad.
  • Dinner: Swedish Meatballs, Vegetarian "Meat"balls, Egg Noodles, Steamed Broccoli, Garlic Bread, and Arugula Salad.
Thursday
  • Lunch: Shrimp/Chicken Quesadillas, Veggie Quesadillas, Black Beans, and Spanish Rice.
  • Dinner: Pulled Barbecue Chicken Sandwiches, BBQ Seitan Sandwiches, Potato Salad, Baked Beans, and Watermelon Slices.
Friday
  • Lunch: Chicken Fried Rice, Tofu Fried Rice, Eggrolls, and Edamame.
  • Dinner: Pot Roast, Veggie Pot Roast, Sauteed Kale and Spinach, Cheddar Biscuits, Creamy Cranberry Salad
Saturday
  • Brunch: Hash Brown Casserole, Frittatas, and Cheesecake.
Sunday
  • Dinner: Artichoke and Spinach Lasagna, Quinoa Salad, and Chocolate Chip Cookies.
