Wednesday

Lunch: Buddha Bowls
Dinner: Beef Enchiladas, Spinach Enchiladas, Spanish Rice, Spicy Peppers and Onions, Vegetables for topping

Thursday

Lunch: Summer Soup of Butternut Squash and Grilled Ham and Cheeses
