Monday
Lunch: Fish sticks, Tofu ‘fish’ sticks, Macaroni and Cheese, Veggies with dip
Dinner: Broccoli Beef, Broccoli Tofu, Egg Rolls, Baby Corn blend, Rice

Tuesday

Lunch: Taco Tuesday: Beef and/or Bean Tacos, Calabacitas, Rice
Dinner: Gyro, Falafel, Mediterranean Cucumber Salad, Quinoa Tabbouleh

Wednesday

Lunch: Frito Pie with Beef, Frito Pie with Beans, Veg, Cornbread
Dinner: Pasta Primavera (Chicken and Veggies), Acorn Squash

Thursday

Lunch: King Ranch Casserole (Chicken or Mushroom), Green Beans, Corn pudding
Dinner: Beef Barbacoa and/or Bean Burritos, Mexican Rice, Corn

Friday

Lunch: Ham and Onion Fritatta, Spinach Fritatta, Pesto pasta, Veggie Blend
Dinner: Shrimp Etouffée, E-tofu-fée, Collard Greens, Rice

Saturday

Brunch: Breakfast Tacos, Stephen’s Saturday Creations

Sunday

Brunch: Eggs, Oatmeal Pancakes, Chef’s choice meat, sides and vegetables
