Monday
Lunch: Mexi Burgers, Black Bean Patties, Sweet Potato Fries, Corn
Dinner: Stuffed Bell Peppers (Turkey or Tofu), Marinara, Scalloped Potatoes, Veg

Tuesday
Lunch: West African Chicken (or Chickpea) Stew, Couscous, Peas
Dinner: Sausage (PORK!) or Veg Stromboli, Pesto Pasta, Ratatouille

Wednesday
Lunch: Fish pieces, Spinach Nuggets, Roasted Potatoes, Corn
Dinner: Shrimp Po’ Boys, Mushroom Po’ Boys, Black-Eyed Pea and Collards Soup, Rice

Thursday
Lunch: Thai Chicken Spaghetti, Thai Tofu Spaghetti, Squash Blend
Dinner: Spaghetti with Meatballs, Spaghetti with Not-Meat balls, Baked Eggplant

Friday
Lunch: Chili (Beef or Veg), Cilantro Green Beans, Cornbread
Dinner: Dijon Chicken, Dijon Tofu, Mashed Potatoes, Gravy, Asparagus

Saturday
Brunch: Brunch Tacos, Chef’s choice vegetables and side

Sunday
Brunch: Eggs, Bacon, Lemon Poppyseed Muffins, Chef’s choice vegetables
