Menu For the Week of October 22nd to 29th


Monday
          Lunch: Chicken or Veggie Pasta Salad, Crudités and Hummus
          Dinner: Parmesan Chicken or Eggplant Parmesan, Herbed Spaghetti Squash and Twice Baked Potatoes

Tofu Tuesday (Meatless meals, actually none of these have tofu so don’t worry!)
          Lunch:  Black Bean Tacos, Rice, Corn, Guacamole and lots of Toppings
          Dinner: (Vegan)  Soba Noodles, Green Beans with Waterchesnuts and Dessert Sticky Rice

Wednesday
          Lunch: Chicken Strips or Spinach Nuggets, Carrots, Chips and Salsa
          Dinner: Dijon Chicken or (Vegan) Tempeh with Piccata Sauce, Green Bean Casserole, Scalloped Potatoes

Thursday
          Lunch: Chicken or Vegan Fried Rice, Broccoli
          Dinner: Roasted Turkey Breast or Crispy Quinoa Cakes with Red Pepper Sauce, Stuffing, Asparagus, Blueberry Cheesecake Mousse

Friday
          Lunch: Chicken or Veggie Enchilada Casserole, veggie
          Dinner: Rainbow Trout or Seitan Mushroom Roast, Macaroni and Cheese, Spinach and Pecan Pie

Saturday
          Brunch: Pumpkin Raisin Bites, Ham or Veggie Frittata, Fresh Veggies with Spinach Dip

Sunday
           Dinner: Turkey or Quinoa Stuffed Bell Peppers, Risotto, Kale, Pumpkin Pie,

Monday
          Lunch: Hamburgers or Black Bean Burgers, French Fries, Collard Greens and Rice Krispies
          Dinner: Turkey Shepherd’s Pie or Veggie Shepherd’s Pie, Green Beans, Lemon Bars
